It was founded by Arthur Dillon, an American soldier. He married a wealthy widow and used her money to buy the estate. Originally production was sugar, but in the 19th century it started with the production of rum. Dillon is recognized around the world for its exceptional quality. This rum is a Rhum Agricole, a so-called agricultural rum, made from fresh sugar cane juice. The sugar cane is cut into pieces and pressed out. The first juice is called Vesou. It is used to make the Dillon VSOP Trés Vieux and is first fermented. The result of the fermentation, a type of wine with a maximum alcoholic strength of 5%, is brought to an alcohol content of between 60 and 70% in a continuous distillation process.
